Ingredients:

  • Lemons, fresh
  • Mint leaves
  • White rum
  • Sparkling water
  • Simple syrup
  • Lime juice

Instructions:

  1. Cut the lemons into wedges and place them in a large pitcher.
  2. Add the mint leaves to the pitcher and muddle (gently press) them with a muddler or spoon to release their oils and flavor.
  3. Pour the white rum over the lemons and mint leaves in the pitcher.
  4. Top off the pitcher with sparkling water.
  5. Stir the mixture gently to combine the ingredients.
  6. Add the simple syrup (equal parts sugar and water, dissolved) to the pitcher and stir to combine.
  7. Squeeze the lime juice into the pitcher and stir again.
  8. Serve the drink in glasses over ice, garnished with additional mint leaves or lemon wedges if desired.
