Ingredients:
- Fresh raspberries
- Fresh mint leaves
- Lemon juice
- Sugar
- Club soda
Instructions:
- Rinse the fresh raspberries and pat them dry with a paper towel.
- In a small bowl, mix together the lemon juice and sugar until well combined.
- Add the mint leaves to the bowl and muddle (or mash) them gently with a spoon to release their oils and flavor.
- Place the raspberries in a cocktail shaker and add the mint mixture.
- Fill the shaker with ice and shake vigorously for about 10-15 seconds to combine and chill the ingredients.
- Strain the mixture into a glass filled with ice cubes.
- Top the glass off with club soda and stir gently.
