Ingredients:
- Fresh pineapple
- Fresh sage
- Lemon juice
- Simple syrup
- Club soda
- Ice
Instructions:
- Cut the fresh pineapple into bite-sized pieces and place them in a medium bowl.
- In a small bowl, mix together the fresh sage and lemon juice to create a marinade.
- Add the marinade to the pineapple pieces and toss to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
- In a small saucepan, combine the simple syrup and club soda. Heat over medium heat, stirring constantly, until the sugar has dissolved and the mixture is hot but not boiling.
- Remove the pineapple from the refrigerator and place it in a large glass or plastic container with a tight-fitting lid. Pour the hot syrup mixture over the pineapple, making sure that all of the fruit is covered.
- Seal the container and place it in the freezer for at least 4 hours or until frozen solid.
- Remove the container from the freezer and let it sit at room temperature for 10-15 minutes before serving. This will allow the pineapple to thaw slightly and be easier to scoop.
