Ingredients:

  • Fresh pineapple
  • Fresh sage
  • Lemon juice
  • Simple syrup
  • Club soda
  • Ice

Instructions:

  1. Cut the fresh pineapple into bite-sized pieces and place them in a medium bowl.
  2. In a small bowl, mix together the fresh sage and lemon juice to create a marinade.
  3. Add the marinade to the pineapple pieces and toss to coat evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
  5. In a small saucepan, combine the simple syrup and club soda. Heat over medium heat, stirring constantly, until the sugar has dissolved and the mixture is hot but not boiling.
  6. Remove the pineapple from the refrigerator and place it in a large glass or plastic container with a tight-fitting lid. Pour the hot syrup mixture over the pineapple, making sure that all of the fruit is covered.
  7. Seal the container and place it in the freezer for at least 4 hours or until frozen solid.
  8. Remove the container from the freezer and let it sit at room temperature for 10-15 minutes before serving. This will allow the pineapple to thaw slightly and be easier to scoop.
