Ingredients:

  • 2 ripe mangos, peeled and chopped
  • 1 lemon, juiced
  • 1/4 cup fresh mint leaves
  • 1/4 cup simple syrup
  • 2 oz white rum
  • 4 oz club soda

Instructions:

  1. In a cocktail shaker, combine chopped mango, lemon juice, mint leaves, and simple syrup.
  2. Muddle (gently stir) the ingredients together for about 10-15 seconds to release the flavors and oils.
  3. Add rum to the shaker and muddle again for another 10-15 seconds.
  4. Fill the shaker with ice and shake vigorously for about 15-20 seconds.
  5. Strain the mixture into a highball glass filled with ice.
  6. Top with club soda and stir gently to combine.
  7. Garnish with additional mint leaves or a slice of mango, if desired.
