Ingredients:
- 2 ripe mangos, peeled and chopped
- 1 lemon, juiced
- 1/4 cup fresh mint leaves
- 1/4 cup simple syrup
- 2 oz white rum
- 4 oz club soda
Instructions:
- In a cocktail shaker, combine chopped mango, lemon juice, mint leaves, and simple syrup.
- Muddle (gently stir) the ingredients together for about 10-15 seconds to release the flavors and oils.
- Add rum to the shaker and muddle again for another 10-15 seconds.
- Fill the shaker with ice and shake vigorously for about 15-20 seconds.
- Strain the mixture into a highball glass filled with ice.
- Top with club soda and stir gently to combine.
- Garnish with additional mint leaves or a slice of mango, if desired.
