Instructions:
Step 1: In a cocktail shaker, muddle the fresh ginger slices with a small amount of simple syrup (equal parts water and sugar, dissolved) to release their flavor.
Step 2: Add the mango puree, lime juice, and white rum to the shaker and stir to combine.
Step 3: Fill the shaker with ice and shake vigorously for about 15-20 seconds to combine and chill the ingredients.
Step 4: Strain the mixture into a highball glass filled with ice.
Step 5: Top the drink off with club soda and stir gently to incorporate.
Step 6: Garnish with a slice of fresh lime or mango, if desired.
