Ingredients:
- Fresh strawberries
- Fresh mint leaves
- White rum
- Lime juice
- Simple syrup
- Club soda
Instructions:
- Rinse and hull the strawberries.
- In a blender or food processor, puree the strawberries until smooth.
- Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much juice as possible.
- Add the white rum and lime juice to the bowl and stir to combine.
- In a separate bowl, mix the simple syrup with 1/2 cup of warm water until dissolved.
- Pour the simple syrup mixture into the strawberry mixture and stir to combine.
- Stir in the club soda and gently fold the mixture until it’s well combined.
- Chill the mixture in the refrigerator for at least 30 minutes before serving.
