Ingredients:

  • Fresh pears
  • Fresh ginger
  • Lime juice
  • Simple syrup

Instructions:

  1. Peel and chop the fresh pears into small pieces.
  2. Grate the fresh ginger using a Microplane grater.
  3. Juice the lime and set aside the juice.
  4. In a saucepan, combine the chopped pears, grated ginger, and lime juice. Heat over medium heat, stirring occasionally, until the mixture is soft and fragrant.
  5. Add the simple syrup to the mixture and stir to combine.
  6. Continue heating for an additional 2-3 minutes, or until the mixture has thickened slightly.
  7. Remove from heat and let cool to room temperature.
  8. Strain the mixture through a fine-mesh sieve into a clean glass container. Discard any solids.
  9. Store in the refrigerator for up to 2 weeks, or until desired use.
